Chai Concentrate

Recently I fell in love with Chai. My family has enjoyed it for years, but for whatever reason I had never tried it. I had a cup the other week as I have been delving into various teas as a part of my liquor avoidance. My enjoyment of loose leaf tea has been growing.

The other day, my wife decide she wanted to try her hand at making Chai Concentrate. She found the recipe on Tasty Yummies and set to work. She filled the slow cooker with ingredients we never had in the house before. After a few hours, the smell that flowed through our home was absolutely heavenly.

Once the process in the slow cooker was done, our oldest set to work filtering out the chai concentrate. A large pitcher was filled and then another half pitcher. The Chai was left alone to allow more of the sediment to form at the bottom.

We then sampled the Chai in some milk. I was astounded at how delicious it was. My wife has since had about a half dozen glasses and there is plenty leftover remaining.

Besides a delicious beverage to be had, my wife found pleasure in constantly saying “Chai Tea” in order to irritate our 18 year old. Random had to correct my wife by asking why she insisted on saying “Tea Tea”. I was just amused by the banter throughout the process.

I recommend others to make the Chai concentrate- especially if you drink Chai lattes on a regular basis.

Victoria: Day 2- Impressed by the Empress

On Sunday we booked High Tea at The Empress in Victoria for the family. Over the decades of traveling to Victoria- I’ve always wanted to see the inside of The Empress. My wife and I wanted to make this trip to Victoria special for our daughters. Our sixteen year old had never been here, and our eighteen year old needed a way to celebrate her high school graduation.

Walking into The Empress is overwhelming and intimidating. Every bit about it was elegant. From the piano player to the china with which our tea was served- posh is the word that comes to mind.

We did our part by dressing in our Sunday Best. The kids behaved in their best possible manners as well. We got some great photos with beautiful smiles.

My wife and I chose a Rose tea that was a favorite of Princess Diana. Our children each chose a flavour that matched their palette. The food which was served was decadent and delectable. We were presented with fabulous tea sandwiches and desserts.

This trip was probably the most extravagant experience we have ever shared as a family. From staying in the penthouse suite to experiencing a high tea- this weekend getaway was a one of a kind local journey.

Moments like these matter most to us. My wife and I hope that our children will talk about this in years to come.

Staying Dry

My wife and I had a fairly successful Sober September. I faltered once and had a beer at the airport in Winnipeg. As September ended and October began, I wasn’t eagerly waiting for the month to end in order to “Hit the sauce” so to speak.

On Thursday we went out with some friends for a dinner. Originally we were going to go to Trading Post in Abbotsford- a place with great food and atmosphere. I would’ve likely had my favorite beer there- the 1828 Helles Lager. But they were closed for a private event. So we ended up at The Canadian Brewhouse instead.

Their beer special was Budweiser. A beer I don’t overly enjoy. So I had a ginger ale instead and I felt good about it. I know we’re only five days into October, but I’ve been enjoying a variety of teas and sodas in lieu of alcohol. The only thing I’m noticing is that I am craving sweets more often. Hence the sodas.

As Autumn progresses, I’ll probably enjoy a drink or two at some point. I’m just not actively going out to buy beers or planning nights with friends at breweries as I have in the past.

Maybe I can find an elegant tea house nearby and invite you out for a social date.

Tea Time

I should drink more tea.


We have a lovely tea set that we picked up many years ago on a trip to Edmonton.  When I first saw it- I had to own it.  Yet, we don’t ever use it.

But it’s really lovely as a display piece.  At what age did I become an old person?  I think it’s when I finally decided to put my plates on display instead of eating off of them.

I need to drink more tea so that my dishes aren’t on display any more.  I don’t want to admit that I’m getting older.

Everyone has an opinion on things.  Some of the best discussions I have had with people is when they can discuss rationally their point of view.  Here are my opinions.  No facts or info backing up what I prefer.  Just my opinion on which is better.  Feel free to discuss.

Bad Movie….


Dogs are better than cats.  My dog is super loyal and just plain amazing.


Coffee is better than tea.  Coffee is the go to wake up beverage in my household.


Toilet paper needs to go over towards the front.  Not flap behind.


Star Wars is better than Star Trek.  (Simply a more action packed universe.)


I’m not even going to begin this debate on man vs woman.

There are plenty of other things that people fight over.  Beer vs wine.  Hot dogs vs hamburgers.  Or stronger opinions that have caused riots: Anti-vax vs Vaccination.  Hillary vs Trump.  Home school vs classrooms.  Or even hands on learning vs textbook learning.  God vs everyone else’s God(s) vs Atheists.  Evolution vs Creationism.  

All of us have an opinion on something.  Sometimes our opinions are so strong that we don’t ever accept that we may be wrong.  I am willing to have a healthy debate with friends or family as long as there isn’t animosity being brought into the talks.  


Unless we are talking about Lord of the Rings.  Harry Potter is far superior.  End of discussion.
